First use
- after first opening, there may be a scent of natural Japanese cypress which will fade in about one week
- before use, wash gently with soap and water and towel dry
- place upright in stand to air dry evenly
NOTE: please be careful in placement of the standing board in front of cupboards
general use
- remove knife from the storage slot BEFORE removing the board from the stand
- rinse the board under running water to wet before each use to help prevent stains and odors seeping into the wood
- to help prevent slipping, place a dampened towel between the counter and board
- store board with knife vertically in the stand allowing the water to drain in the direction of the wood grain, it’s not recommended to store board on its side or lying flat
- hand wash only, it is not dishwasher, oven nor microwave safe
- serrated knives will permanently mark the board, please do not use
- meat juices and fats will stain and mark the board and may cause permanent damage

care recommendations
- wash with soap and water after each use and dry by standing the board’s wood grain vertically (using the stands provided)
- to suppress bacteria growth and rot, please occasionally dry the board thoroughly outdoors in the shade or near an open window
- to help remove stains and food odors from hinoki wood:
pour boiling water on the board and dry in the shade
scrub generous amounts of rock salt with a cut lemon half into the board, then to wash with soap and water
- to sterilize the product, we recommend the occasional use of natural cleaning agents (vinegar or alcohol) then dry in the shade
NOTE: scrubbing vigorously may mar the surface; and, exposing the board to direct sunlight may cause warping and cracks
